Lemon Gelato Recipe: (Makes about 1 Litre, From Sunbeam Snowy manual)

*Note- In these photos I doubled the recipe below

1 cup (250ml) water
1/2 cup (110g) caster sugar
1/4 cup lemon zest
2/3 cup (160ml) freshly squeezed lemon juice
2/3 cup (160ml) thickened cream


1. Place sugar, water, lemon juice and lemon zest in a small saucepan.

2. Stir over a low heat until the sugar dissolves. Bring to the boil and cook for two minutes. Remove from heat, strain mixture and cool to room temprature. Refridgerate for 4-6 hours or overnight.

3. Whisk together the lemon and cream mixture in a jug.

4. Set up and turn on frozen dessert maker according to instructions. The freezer cannister will usually have to be frozen for over 24 hours.

5. Pour mixture into ice cream maker. The manual said that the mixture should be ready when the paddle starts to rotate in the other direction or thicken, but I found when making this that the paddle did not rotate back, so it's okay if it doesn't.

6. After the mixture has thickened, cover it with freezer paper or baking paper place in freezer, for 4 to 6 hours or preferably overnight.

7. Scoop out icecream and enjoy!
